Equipment

  • baking dish

Ingredients

  • 1 package whole cranberries 12 ounce
  • 1 small orange unpeeled, sliced
  • 1.33 cups white sugar
  • 0.5 cup pecan pieces
  • 0.25 cup orange juice
  • 0.75 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.125 teaspoon ground mace
  • 1 can cut yams 40 ounce, drained

Instructions

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine cranberries, orange slices, sugar, pecans, orange juice, cinnamon, nutmeg, and mace in a 2-quart baking dish.
  • Bake in preheated oven until cranberries soften, about 30 minutes. Stir yams into cranberry mixture and continue baking until heated through, about 15 minutes more.

Notes

The orange peel should be left on. In addition to slicing the orange, I also cut the slices into wedges. Fresh boiled yams or sweet potatoes may be substituted for canned.
