Sausage and Vegetables
- 1 package beef smoked sausage 14 ounce, sliced on the bias into thin medallions
- 1 tablespoon olive oil
- 2 tablespoons butter
- 2 onions quartered and thinly sliced
- 2 cloves garlic pressed through garlic press
- Salt
- ¾ teaspoon freshly cracked black pepper
- 2 teaspoons paprika
- ½ teaspoon smoked paprika
- 10 medium-size red skin potatoes peeled and sliced into ½ inch thick circles, about 2 ¾ pounds
- 1 ½ cup chicken stock
- 1 tablespoon chopped flat-leaf parsley
Preparation Steps
Gather and prep all ingredients according to the list.
Heat pan over medium-high and add olive oil, then caramelize sausage until brown. Set aside.
Add butter and more olive oil to the pan, melt together. Caramelize sliced onions until golden-brown.
Add garlic, salt, black pepper, paprika, and smoked paprika. Sauté until garlic is aromatic.
Fold in sliced potatoes and coat with onion mixture, then add chicken stock.
Cover with a lid askew, simmer on medium-low for 15 minutes, stirring occasionally.
Uncover and simmer for another 10 minutes until potatoes are tender and sauce thickens.
Fold in caramelized sausage and parsley, add olive oil and adjust seasoning if necessary.
Serve with warm, crusty bread, if desired.
