Sausage and Vegetables

  • 1 package beef smoked sausage 14 ounce, sliced on the bias into thin medallions
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 onions quartered and thinly sliced
  • 2 cloves garlic pressed through garlic press
  • Salt
  • ¾ teaspoon freshly cracked black pepper
  • 2 teaspoons paprika
  • ½ teaspoon smoked paprika
  • 10 medium-size red skin potatoes peeled and sliced into ½ inch thick circles, about 2 ¾ pounds
  • 1 ½ cup chicken stock
  • 1 tablespoon chopped flat-leaf parsley

Preparation Steps

  • Gather and prep all ingredients according to the list.
  • Heat pan over medium-high and add olive oil, then caramelize sausage until brown. Set aside.
  • Add butter and more olive oil to the pan, melt together. Caramelize sliced onions until golden-brown.
  • Add garlic, salt, black pepper, paprika, and smoked paprika. Sauté until garlic is aromatic.
  • Fold in sliced potatoes and coat with onion mixture, then add chicken stock.
  • Cover with a lid askew, simmer on medium-low for 15 minutes, stirring occasionally.
  • Uncover and simmer for another 10 minutes until potatoes are tender and sauce thickens.
  • Fold in caramelized sausage and parsley, add olive oil and adjust seasoning if necessary.
  • Serve with warm, crusty bread, if desired.
