Salad Ingredients

  • 2 cans chickpeas 15.5 oz each, drained and rinsed
  • 1 medium cucumber sliced into quartermoons
  • 1 medium red bell pepper seeds and ribs removed, finely chopped
  • ½ medium red onion thinly sliced
  • ½ cup feta cheese crumbled (about 3 oz.)
  • ½ cup Kalamata olives halved, pitted

Dressing Ingredients

  • teaspoon Kosher salt
  • ¼ teaspoon black pepper freshly ground
  • ½ cup extra-virgin olive oil
  • ¼ cup white wine vinegar
  • 1 tablespoon fresh parsley finely chopped
  • 1 tablespoon lemon juice fresh
  • ¼ teaspoon crushed red pepper flakes

Instructions
 

Preparation Steps

  • In a large bowl, toss chickpeas, cucumber, bell pepper, onion, feta, and olives; season with salt and black pepper.
  • In a jar with a lid, combine oil, vinegar, parsley, lemon juice, and red pepper flakes. Seal jar and shake until emulsified; season with salt and black pepper.
  • Pour dressing over salad and toss to coat just before serving.
