Salad Ingredients
- 2 cans chickpeas 15.5 oz each, drained and rinsed
- 1 medium cucumber sliced into quartermoons
- 1 medium red bell pepper seeds and ribs removed, finely chopped
- ½ medium red onion thinly sliced
- ½ cup feta cheese crumbled (about 3 oz.)
- ½ cup Kalamata olives halved, pitted
Dressing Ingredients
- ⅓ teaspoon Kosher salt
- ¼ teaspoon black pepper freshly ground
- ½ cup extra-virgin olive oil
- ¼ cup white wine vinegar
- 1 tablespoon fresh parsley finely chopped
- 1 tablespoon lemon juice fresh
- ¼ teaspoon crushed red pepper flakes
Preparation Steps
In a large bowl, toss chickpeas, cucumber, bell pepper, onion, feta, and olives; season with salt and black pepper.
In a jar with a lid, combine oil, vinegar, parsley, lemon juice, and red pepper flakes. Seal jar and shake until emulsified; season with salt and black pepper.
