Equipment

Ingredients
  

Chicken

  • 650 g Boneless & skinless chicken breast About 4 breasts, cut into bite-sized pieces

Cooking Oil

  • 1 tablespoon Olive oil See notes

Garlic

  • 3 cloves Garlic Peeled and crushed

Tomatoes

  • 170 g Sun dried tomatoes Drained and very finely chopped

Spices

  • 1 teaspoon Oregano
  • 2 teaspoon Paprika

Pasta

  • 250 g Dried pasta See notes

Stock

  • 650 ml Chicken stock See notes

Cream

  • 150 ml Double cream

Cheese

  • 50 g Parmesan Grated

Vegetables

  • 120 g Spinach

Pepper

  • Freshly ground black pepper

Cooking Instructions

  • In a large, deep frying pan, heat the oil over a medium heat. When it's hot, carefully add the chicken pieces and a good sprinkling of pepper. Cook for 5 minutes stirring occasionally until all sides are starting to colour.
  • Reduce the heat and add the garlic, sun dried tomatoes, oregano and paprika. Stir for 3-5 minutes until the garlic is softened.
  • Add the pasta and stock and give everything a good stir and put the lid on. Cook for 15-20 minutes, stirring occasionally, until the pasta is cooked and most of the liquid has been absorbed.
  • Turn the heat to the lowest setting add the spinach and cream and stir very well for 1-3 minutes until the spinach is wilted and the cream is heated through. Check the chicken is cooked through and add more salt and pepper if needed.
  • Turn off the heat and stir in the parmesan.

Notes

Use olive oil, or use some of the oil from the sun dried tomatoes jar. This adds heaps of extra flavour. The cooking time for One Pot Pastas can vary a lot, depending on the heat and the pasta shape. Just keep an eye on it as it cooks and allow to cook for longer if needed. If you do need to cook for longer, you may need to add a splash or two of more boiling water. If you (or your family) don't love the texture of sun-dried tomatoes just cut them up very very small, they melt into the sauce and add heaps of flavour. Double cream is known as heavy cream in the US.
