  • 1 large yellow onion
  • 3 medium carrots
  • 3 medium stalks celery
  • 3 cloves garlic

Broth and Seasoning

  • 2 tablespoons unsalted butter or olive oil
  • 2.5 teaspoons kosher salt plus more as needed
  • 0.5 teaspoon freshly ground black pepper
  • 2 32-ounce cartons low-sodium chicken broth about 8 cups
  • 5 sprigs fresh thyme
  • 2 dried bay leaves

Chicken and Noodles

  • 1 2.5- to 3-pound rotisserie chicken or about 1 pound cooked, boneless chicken
  • 6 ounces dried extra-wide egg noodles about 3 ¼ cups

Garnish

  • 0.5 medium bunch fresh parsley or dill
  • 0.5 large lemon optional

Instructions
 

Preparation

  • Dice the onion and add to a bowl.
  • Peel and cut carrots into rounds and add to the bowl.
  • Cut celery stalks into pieces and add to the bowl.
  • Mince garlic cloves and add to the bowl.

Cooking

  • Melt butter or heat olive oil in a Dutch oven over medium heat. Add onion mixture, salt, and pepper. Cook until onion is translucent, about 5 minutes.
  • Add chicken broth, thyme, and bay leaves. Increase heat to medium-high and bring to a boil.
  • Shred rotisserie chicken into bite-sized pieces and add to soup along with egg noodles.
  • Reduce heat and maintain a gentle simmer, cooking noodles until just shy of al dente, about 6 to 7 minutes.
  • Remove thyme sprigs and bay leaves. Season with salt as needed, adding parsley or dill and lemon juice if using.
