Ingredients
  

Beef and Vegetables

  • 1 tablespoon olive oil
  • 1 (2–3 lb) beef roast
  • 1 large onion, sliced
  • 4 cloves garlic, chopped
  • 1 lb carrots, sliced
  • 1 cup cranberries (fresh or frozen)

Sauce Ingredients

  • 2 tablespoon tomato paste
  • 1 teaspoon thyme, chopped
  • 1 teaspoon rosemary, chopped
  • ½ teaspoon red pepper flakes (optional)
  • 2 cups beef broth
  • ¼ cup balsamic vinegar
  • ½ cup cranberry sauce (optional)
  • 2 tablespoon soy sauce
  • 4 tablespoon maple syrup or brown sugar
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoon cornstarch + 2 tablespoon water (optional)

Instructions
 

Cooking Steps

  • Brown beef on all sides in olive oil.
  • Add onions, garlic, and herbs; cook until fragrant.
  • Add broth, vinegar, cranberry sauce, and seasonings.
  • Add beef, carrots, and cranberries. Cook 3–4 hrs at 275°F or LOW for 8 hrs.
  • Mix cornstarch and water; stir into sauce until glossy.
  • Shred beef, drizzle with glaze, and enjoy warm.

Notes

A sweet-tart sauce adds warmth and depth for a cozy dinner worth savoring.
