Ingredients
  

Chicken and Vegetables

  • 1 pound cooked chicken breast chopped or shredded
  • 4 cups white potatoes peeled and chopped into cubes
  • 2 large heads broccoli chopped into florets

Sauce

  • 4 tablespoons salted butter
  • ½ cup minced white onion
  • 4 tablespoons all-purpose flour
  • 1 cup chicken broth/stock
  • 1 cup whole milk
  • 2 cups shredded cheddar cheese divided
  • 1 teaspoon smooth Dijon mustard
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder

Topping

  • 1 tablespoon olive oil
  • ¾ cup panko breadcrumbs plain, unseasoned

Instructions
 

Preparation

  • Preheat your oven to 350°F and prepare a large casserole dish.
  • In a large saucepan, bring water to a boil and cook the chopped potatoes for 5-6 minutes.
  • Remove the potatoes using a slotted spoon and place them in the casserole dish with cooked chicken.
  • Add broccoli to the boiling water and cook for 1 minute, then transfer to the casserole dish.

Cheese Sauce

  • In the same saucepan, melt butter over medium-low heat and add minced onion, cooking until soft.
  • Stir in flour until combined, then pour in chicken broth and milk, whisking until thickened.
  • Add 1 cup shredded cheese to the sauce until melted, then mix in Dijon mustard, salt, pepper, garlic powder, and onion powder.

Combine and Bake

  • Pour the cheese sauce over chicken, broccoli, and potatoes, and stir to combine.
  • Cover with foil and bake for 20 minutes in preheated oven.
  • Combine olive oil and panko breadcrumbs in a bowl. After 20 minutes, uncover the casserole and sprinkle with remaining cheese and breadcrumbs.
  • Return to oven and bake uncovered for 10 minutes, until hot and bubbly. Serve and enjoy!

Notes

Flexible baking dish options; standard lasagna pan or a 3.8-quart round casserole dish work well. Warm broth and milk help thicken the sauce faster.
