Ingredients
  

Lemon Cookie Dough

  • ½ cup softened butter one stick
  • ¾ cup sugar
  • 1 tablespoon fresh lemon juice substitute 1 ½ teaspoon lemon extract
  • 1 teaspoon fresh lemon zest
  • 2 large eggs
  • ¼ cup whole milk or half and half
  • 2 ¾ cups all purpose flour
  • 2 ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoon nonpareils any color desired

Lemon Glaze

  • 1 ¼ cups powdered sugar
  • 1 ½ tablespoon fresh lemon juice
  • 2 tablespoon whole milk or half and half (or slightly more)

Instructions
 

Cookie Preparation

  • Preheat oven to 325F.
  • Cream butter: Add sugar and softened butter to a large mixing bowl and mix until combined.
  • Add wet ingredients: lemon juice, lemon zest, eggs one at a time while mixing, and milk.
  • Add flour: Mix in about ¼ cup of flour at a time until combined. Scrape the sides and bottom of the bowl.
  • Add baking powder and salt and mix.
  • Line two large cookie sheets with parchment paper or silicone baking mats.
  • Make cookie dough balls using about one and a half tablespoon of cookie dough, placing them on the cookie sheets in three rows of four.
  • Bake cookies at 325F for 10-14 minutes. The tops should not look wet. Use a toothpick to check for doneness.
  • Cool cookies for 10 minutes before decorating.

Lemon Glaze Preparation

  • In a small mixing bowl, add powdered sugar, lemon juice, and milk. Stir until smooth, adjusting consistency as needed.

Cookie Decoration

  • Dip the top of a cooled cookie into the lemon glaze and twist. Sprinkle nonpareils before the glaze dries.

Notes

Store cookies in an airtight container in the refrigerator for up to 5 days. For freezer storage, place decorated cookies in the freezer for 15 minutes before transferring to freezer bags for up to 6 months.
