Ingredients
  

Meat and Base

  • 3 pounds beef chuck cut into 2-inch cubes
  • 150 grams bacon cut into lardons
  • 2 cups red wine a drinkable variety

Vegetables

  • 1 cup pearl onions
  • 8 ounces mushrooms sliced

Seasoning

  • 2 cloves garlic minced
  • 1 teaspoon thyme dried
  • 2 cups beef stock

Cooking Steps

  • Marinate the beef in red wine and herbs for several hours or overnight.
  • In a Dutch oven, cook the bacon until crispy; remove and set aside.
  • Add the beef to the pot and brown on all sides.
  • Combine cooked bacon, onions, mushrooms, stock, and seasonings with the beef and simmer.
  • Serve the stew with crusty bread or over mashed potatoes.

Notes

Best if made a day in advance. Do not sauté mushrooms and onions until just before serving.
